Ten Restaurants That Changed America, by Paul Freedman

From Delmonico’s to Sylvia’s to Chez Panisse, a daring and original history of dining out in America as told through ten legendary restaurants.

Combining a historian’s rigor with a foodie ’s palate, Ten Restaurants That Changed America reveals how the history of our restaurants reflects nothing less than the history of America itself. Whether charting the rise of our love affair with Chinese food through San Francisco’s fabled The Mandarin, evoking the richness of Italian food through Mamma Leone’s, or chronicling the rise and fall of French haute cuisine through Henri SoulĂ©’s Le Pavillon, food historian Paul Freedman uses each restaurant to tell a wider story of race and class, immigration and assimilation. Freedman also treats us to a scintillating history of the then-revolutionary Schrafft’s, a chain of convivial lunch spots that catered to women, and that bygone favorite, Howard Johnson’s, which pioneered midcentury, on-the-road dining, only to be swept aside by McDonald's. Lavishly designed with more than 100 photographs and images, including original menus, Ten Restaurants That Changed America is a significant and highly entertaining social history. 95 images

Review
“Reading Paul Freedman about America, stalking myself through the taste of meals at eight of his ten restaurants, each sampled for different reasons at different moments in my life, I began to draw the outlines of a world I shared with other people, people more or less like me, and to wonder what ‘like me’ meant when it came to expectations of inclusion, of common flash points of reference, of understanding and participating in the coded language of what we eat and how it is prepared and who is sitting at all those tables around us. I think that’s what Freedman intended us to do. . . . Ten Restaurants is a book as much about the contradictions and contrasts in this country as it is about its places to eat. It is designed to keep you up, thinking, and, as I did this summer, returning to its rich, and often troubling, pages.” (Jane Kramer - The New Yorker)

“Fascinating. . . . In his sweep through centuries of food culture, Freedman illuminates much more than what happened in the front or back of the house of these 10 distinct places (although he does plenty of that). He effectively makes the case that the story of America’s restaurants is one of changing immigration patterns, race relations, gender and family roles, work obligations, and leisure habits. . . . [Freedman’s] insights are shrewd and demonstrate the power of historical study in understanding the world.” (Joe Yonan - Washington Post)

“Impeccable . . . . Inevitably, a book like this will induce a feast of delicious nostalgia in most readers, a longing for all those good ― and even some not so good ― menus and dishes past. But the culinary and cultural journey Mr. Freedman has taken us on demonstrates the abiding qualities in our society ― its openness to new sources and sourcing, its diversity, its restlessness with the same old thing, its capacity for reinvention and assimilation ― all of which bode well for the future of America’s restaurants and its cuisine.” (Martin Rubin - Washington Times)

“Fascinating....Mr. Freedman’s book suggests that it’s not ultimately restaurants that change America―it’s the people in the kitchen.” (Victorino Matus - Wall Street Journal)

“Eminently readable. . . .In a narrative that is intellectually delicious, Freedman presents a new way of thinking about ‘you are what you eat.’ This will appeal widely, engaging readers with both a casual or scholarly interest in food history and its influence on American culture in the late 19th and 20th centuries.” (Courtney McDonald - Library Journal)

“A robust historical trek through America's restaurant cuisine over three centuries. . . . Delightfully illustrated with menus, photos, and other visual accompaniments, the narrative delves into each of the 10 restaurants' unique stories, beginning with America's first restaurant, Delmonico's . . . . Culinary historians, those besotted with food culture, and curious general readers will all find something of value in this well-researched, entertaining social and cultural history.” (Kirkus Reviews)

“The most important and entertaining book on the subject of food that I’ve read in years! Paul Freedman paints a portrait of a culture whose cuisine is only beginning to emerge. Witty, sensitive, surprisingly sensuous―more, please!” (Molly O'Neill, author of One Big Table)

“Paul Freedman, one of the world’s most learned food writers, has focused his extraordinary scholarship on a deconstruction of American dining from the corner deli to Chez Panisse. If you enjoy a brown paper bag of fried clams as much as a fourteen-course tasting menu, and ever wondered how it all came to be a part of daily American life, this is the book for you. Ten Restaurants That Changed America is the most enlightening kind of history, as Freedman takes a fresh look at what we take for granted and reveals the extraordinary matrix of cultural and culinary currents that have made it all possible.” (Frederick Kaufman, author of Bet the Farm: How Food Stopped Being Food)

“Pleasure without snobbery: Paul Freedman’s book is itself exactly what the very best American food has always been.” (Joyce E. Chaplin, professor of early American history, Harvard University)

“Spanning over 100 years, Paul Freedman’s engrossing and well-researched exploration of the restaurant as an American institution presents us with a gallery of unforgettable characters, iconic dishes, and unique places. Immigrants, entrepreneurs, chefs, and impresarios all loom large in a narrative that accurately tracks the historical changes in how we eat in public.” (Fabio Parasecoli, director of Food Studies Initiatives, The New School)

) My thanks to the author for an amazing amount of research made so interesting
By Jean A. Klein
I got this book because of how much I appreciated professor Freedman's "Open Yale" course on the early middle ages. He organized a lot of information and made it interesting. He did the same with this book. It has insight into history, social trends, the business of running a restaurant, and, of course, a lot about food. I read it on my Kindle. I think I missed some of the detail from the menus, but it was a treat to be able to touch a word and immediately see the definition! (I even got an invitation to download the French dictionary.) My thanks to the author for an amazing amount of research made so interesting.

A MUST READ for anyone interested in restaurant history. Wow.
By AnnapolisGirly
This is a great book for anyone interested in restaurant/culinary history. The restaurants themselves are interesting, but what I found the most fascinating was how the author captured each era as it related to contemporary society. At first I thought this might be tedious, but once I read into just a few pages, I was completely engrossed by the detail and very thorough research which was presented in such a delightful way. What a fabulous read.

Excellent information. A bit of a slow read.
By garden man
This is a very well researched and authoritative book. I found it very interesting and informative. If you are not a bit of a foodie, it probably is not for you. You certainly could make a case for the inclusion of other restaurants, but the author does a very good job of referencing others and explaining his rationale for inclusion of the institutions that were discussed.

The book is very detailed and scholarly. This is for me, a plus and a minus. The information is extensive and well documented. For me this resulted in a book which felt over long and drawn out. Much as I was interested, and wanted to read it, I found myself slogging through it, wishing each section was just a bit shorter. If I were deeply interested in the content, or an academic or scholar I would have reveled in it. As a slightly less engaged reader, I wish it felt somewhat less ponderous.

I particularly enjoyed the inclusion of menus from the various restaurants. As an aside, having read it on a reader vs. a hard copy, the menus were sometimes blurry and difficult to read. This was a source of frustration for me since I found them so interesting.

Light, by M. John Harrison

Award-winning author, narrator, and screenwriter Neil Gaiman personally selected this book, and, using the tools of the Audiobook Creation Exchange (ACX), cast the narrator and produced this work for his audiobook label, Neil Gaiman Presents.

A few words from Neil on Light: The three strands of the plot "are united by the talent of the narrator, Julian Elfer. When I consulted with Mike Harrison.... on the casting, we both thought Julian Elfer subtly conveyed the individualism of each character... part of the delight of a novel like this, for science-fiction fans or just for people who like good books, is watching the Department of Science Fiction known as 'Space Opera' be polished up, dusted off, and reinvented for the future."

In contemporary London, Michael Kearney is a serial killer on the run from the entity that drives him to kill. He is seeking escape in a future that doesn' t yet exist - a quantum world that he and his physicist partner hope to access through a breach of time and space itself. In this future, Seria Mau Genlicher has already sacrificed her body to merge into the systems of her starship, the White Cat. But the inhuman K-ship captain has gone rogue, pirating the galaxy while playing cat and mouse with the authorities who made her what she is.

In this future, Ed Chianese, a drifter and adventurer, has ridden dynaflow ships, run old alien mazes, surfed stellar envelopes. He went deep, and lived to tell about it. Once crazy for life, he's now just a twink on New Venusport, addicted to the bizarre alternate realities found in the tanks... and in debt to all the wrong people.

Haunting them all through this maze of menace and mystery is the shadowy presence of the Shrander and three enigmatic clues left on the barren surface of an asteroid under an ocean of light known as the Kefahuchi Tract: a deserted spaceship, a pair of bone dice, and a human skeleton.

A stunning fractal novel, not for everyone
By Ian Mccullough
Light was a perplexing read, but in the best way. China Mieville mentioned M. John Harrison as an author to read, so being a Mieville fan I had to try Harrison out. Heck, Neil Gaiman gave the novel an enthusiastic blurb, so it must be good, right?

But, the story didn't grip me at first and I found myself wondering what the big deal was even while recognizing that Harrison is a true wordsmith. Even if this novel deeply turns you off in all other ways, any literate reader should recognize the quality of the writing. Harrison has a true gift for stripped down sentences and a powerfully apt use of vocabulary. Even in the early going, when I was kind of bored, I found myself rereading passages for the simple pleasure of the words on the page.

The plot was bizarre, lurid and somewhat jarring - jumping around in time and space to various loser protagonists. There were three storylines and although I assumed a resolution, the connections remained fuzzy and I was to the point of just getting through it. But about three quarters of the way through something happened - I got it. This is a brilliantly structured novel and I curse my lack of early attention now. Light should be approached as literature, not genre fiction. The convergence of the three characters and their stories happened so gradually, the realization startled me. When you realize there is not three stories, but just one story, interconnections missed earlier spring out. It was a singularly mind blowing epiphany for this veteran SF reader. I am still struggling with the text, but have to recommend Light as a singularly fascinating read.

Light is a fractal novel about fractals, where large ideas are reflected in smaller scale throughout the text. No details, but keep fractals in mind and you will see patterns brilliantly woven throughout the book. This novel gets five stars with the full recognition that it is a personal statement - the book just leapt out and blew me away. Light is going to irritate many and enrage a few like only powerful writing can do. I compare it to David Foster Wallace's Infinite Jest in this way - a book with loud proponents and detractors. But honestly the book this reminds me the most of is Gravity's Rainbow. It's not in that league but there is a resonance. Light challenges SF conceits and blows away expectations and is aimed at those bored with popcorn heroes and trite space opera. But I can see even bright, literate readers having a hostile reaction.

Confessions of a porn addict?
By Bluejack
People have been raving about M. John Harrison for a few years now, and I finally bent before the pressure of public opinion and submitted to what I expected would be a gorgeously written but somewhat dull work that walks that rather tiresome line between genre and mainstream literature: as much literary pretention as genre roots.

Boy was I surprised!

Mostly for the good. This is real science fiction. Harrison takes contemporary and speculative elements of physics, treats them with confidence, and transforms them into poetry. When it comes to working within the genre, he is not merely tossing in a few "speculative" elements, either: His action sequences raise the pulse; his characters are quirky, compelling, in most cases memorable; the fundamental plot hinges on some huge and intriguing unknowns that draw the reader in; there are some frightening scenes that linger with enough power to reappear in nightmare. Harrison has the storyteller's gift for hooking a reader and keeping him hooked.

However, it's worth noting that this book has a serial murderer as one of the main characters: his actions and motivations are grotesque, and ultimately very unsatisfying. This is one of the less memorable characters, and while the whole thread does tie in with the others, by the end it feels quite superfluous.

It's also worth noting that just about every thread, and just about every character, displays an increasingly tiresome fascination with sex. In particular, the graphic, repetitive, and loveless tropes of pornography. I haven't read Harrison's other work; perhaps he intended some deep thematic observation on human motivations, but the whole thing came off feeling like Harrison has a problem with porn addiction.

Finally, it's worth a mention that the ending, while beautiful in a linguistic sense, feels like a fairly standard sci-fi cop out. When things move beyond the power of an author to invent, throw in some mystical mumbo-jumbo, use skill with language to create a beautiful, but meaningless image.

With all these gripes, you'd think I would give this three stars, or maybe two. But the point is: *despite* these flaws, _Light_ by M. John Harrison is a pretty amazing book. The hype is not empty praise: this guy has something. I am left with the hope that it was the flaws in this book that were the exception, and not the wonderful story, not the exquisite and exciting use of language.

Complex and rewarding
By Michel Goldstein
I have to admit that when I started reading this book, it took me a good amount of time to start to understand what is going on. Three stories going on at the same time, without much explanation how they relate to each other. There isn't much explanation about what is going on in the world in each of the stories either (they seem to be happening in different points in time, but later you find out that time is something very abstract throught the book), but when everything starts to fit together, towards the end of the book, it's delighful. Very well written, impressive piece of science fiction.

But I wouldn't recoment it to people that are not a science-inclined and sci-fi fans. M. John Harrison tends sometimes to throw some deep discussions about the validity of physics that may bore some.

Great Book
By Jessica Franke
I purchased this book at Target last night, I just finished the book this afternoon. I Never thought I would feel any empathy, for the queen However I did when I read how her and her brother lived in a gypsy camp that was slaughtered by the kings army, they escaped and for revenge she kills the king for payback and proceeds to conquer surrounding villages after sparing, then imprisoning snow white. The story gave more depth and character plot than I expected I am glad I picked up this book.

snowwhite and the huntsman
By Amazon Customer
i love this telling of the classic snowwhite. It has all the romance but also has the femine hero aswel as the usual male hero. Snowwhite is no delicate woman as she is in the story we all new growing up. she is still everybit as beautiful but can realy stand up for herselfe. Love the twist at the end were its the huntsman that saves her with his kiss and not the prince.
Great read truely enjoyed it!

About the Author
Erle Stanley Gardner (1889-1970) is the master of American mystery fiction. A civil rights lawyer, his mysteries contain intricate, ever-twisting plots. Challenging and full of surprises, these are whodunits in the best tradition. He wrote 146 books, 85 of which feature Perry Mason. The fictional attorney became the basis of a number of television series (reputedly 271 episodes), and achieved an enviable record for winning his cases. Erle Stanley Gardner has an amazing sales record: at the height of his popularity in the mid-1960s he was selling an average of 26,000 copies of his novels a day, making him one of the world's best selling author's, easily outstripping at the time Agatha Christie and Barbara Cartland combined. Born in Malden, Massachusetts, Gardner went on to attend Law School in Indiana, but this only lasted for around a month, being suspended because of various distractions to his studies, especially boxing. He moved to California and became a self-taught attorney before opening his own law office. However, being bored with this he ended up working in sales for five years. Returning to the law in 1921, he created another law firm, but again was not really enthusiastic, other than when acting as a trial lawyer. Writing was his great passion and eventually he gave up the law completely to pursue a full time writing career. In this he was prodigious, setting himself a target of 66,000 words per week. His output under various pseudonyms, as well as his own, went wider than Perry Mason and also extended to non-fiction. He became an expert on the early Mexican exploitation of California. In later life, law did play a significant part in his life once again. With friends, he set up what they termed 'The Court of Last Resort', aimed at investigating and attempting to reverse what they perceived as miscarriages of justice because of poor legal representation, or evidential problems. Gardner himself once wrote: 'I want to make my hero a fighter, not by having him be ruthless to women and underlings, but by creating a character who, with infinite patience jockeys his enemies into a position where he can deliver one good knockout punch.'

The Story from the Missing Securities
By Acute Observer
Morley Eden visits Perry Mason about his problem. A beautiful woman has run a barbed wire fence through the middle of his house! Morley Eden paid a contractor to build a house on a lot, but half the lot belonged to his wife, and now she has claimed her share. Chapter One explains how this happened. Perry visits Judge Goodwin to learn about his decision in this case. The Judge hopes to use this conflict against the contractor Loring Carson. Perry Mason visits Nadine Palmer to tell her about Morley Eden's suit against Loring Carson. Nadine was wrongly accused in Loring's divorce suit, and she will get unwanted publicity (Chapter Five). When the press conference is held inside Morley Eden's part of the house they find the dead body of Loring Carson. The reporters cluster around the body like sharks in a feeding frenzy.

Perry calls the police, then Paul Drake so he can trace Nadine Palmer. Vivian Carson arrives home and is shocked to hear of the murder on the other side of the house. Perry questions Morley about his whereabouts. Lt. Tragg questions Vivian about her activities, then searches around the house and pool. Perry catches a plane to Las Vegas to talk to the woman who knew Loring Carson. Genevieve explains the policies of gambling (Chapter Ten). [Good advice for everyone!] Perry finds Nadine and talks to her until someone official shows up.

In Chapter Eleven Perry finds a briefcase planted in his hotel room, and tries to neutralize it, then returns to the gambling tables. Perry finds that Genevieve just got back from Los Angeles. Then the police arrive to question Perry about a trip. The police don't believe his answers and advise him to leave. So Perry returns to Los Angeles. "The best defense to circumstantial evidence ... is the truth" (Chapter Twelve). Morley and Vivian will be charged with the murder of Loring.

The newspapers report on this case of sex, mystery, drama, missing money, and an unusual setting. The high point is when Nadine testifies to what she saw at Morley Eden's house on the day of the murder (Chapter Thirteen). The cross-examination of Nadine begins in Chapter Fifteen. Perry asks a question that results in Nadine's fingerprints being taken. Perry calls Lt. Tragg to testify about the briefcase found in Perry's room and the unknown fingerprints on it. In his closing argument Perry uses the facts to arrive at a different explanation from the prosecution's theory. Finding fingerprints of a person will not tell you when they were made. Perry asks the jury to compare the sets of fingerprints and decide for themselves. The jury returned with a not guilty verdict. Chapter Sixteen provides a conclusion to this mystery.

This story was published after Erle Stanley Gardner's death. Like other stories, it implicitly critiques the morals and lifestyles of middle-class entrepreneurs.

Divided House
By Nash Black
THE FENCED-IN WOMAN is not one of Erle Stanley Gardner's best efforts, but it is a good read. Perry, Della, and Paul are up against a major problem as the clients will not tell Perry the truth. They have been indited for murder in a classic triangle problem where the death of the spouse will open roads for others.
The spouse was a louse, but some one is trying to frame Perry with removing the assets from the scene of the crime.
This is one where maybe the killer is known, but again maybe he isn't.
Nash Black, author of TRAVELERS.
